Rosemary

This is one of my favorite herbs. I have my herb garden growing on my kitchen window sill outside. When I go to water them, this is the herb I smell the most. I am also growing bill, thyme, sweet basil, garlic chives, and cilantro, to name a few.
Here is a few fun fact about this yummy herb. Rosemary is also found in hair products, lotions, soaps, and even toothpaste. Wikipedia say that this herb is know to improve memory and is used as a symbol of remembrance. Rosemary also contains antioxidants that help prevent or treating cancer, strokes, and Alzheimer's Disease.
Here is a fun recipe to try with fresh rosemary:)

You will need:
lemons sliced
some rosemary leaves
vanilla

In a stock pot, layer the lemon slices on the bottom. Put the rosemary on top of the lemon and poor about a Tablespoon of vanilla. Poor some water in the pot too and Cook on low heat and your house will smell fantastic. This freshener will stay good for a few days.

Chewy Chocolate Chip Cookies

Yesterday, Elijah (3) was wanting chocolate chip cookies. That is the only cookie he will eat that I make. I don't know if that is a good thing or a bad thing. So I decided to spruce it up a bit. I made Chewy Peanut Butter Chocolate Chip cookies. Here is the recipe that I got from allrecipes.com

1/2 c butter, softened 2 Tbs water
1/2 c peanut butter 2 tsp vanilla extract
1 c packed brown sugar 2 1/2 c all-purpose flour
1/2 c white sugar 1 tsp baking soda
2 eggs 1/2 tsp salt
2 Tbs light corn syrup 2 c chopped semisweet chocolate chunks

Preheat oven to 375 degrees (190 degrees C).
In a large bowl, cream together the butter, peanut butter (I used fresh ground roasted peanuts that I bought at Whole Foods), brown sugar, and white sugar until smooth. Beat in the eggs one at a time, then stir in the corn syrup, water, and vanilla. Combine flour, baking soda, and salt; stir into the peanut butter mixture. Fold in the chocolate chunks ( I accidentally bought chips and it turned out just fine). Drop by 1/4 cupfuls 3 inches apart onto ungreased baking sheets.
Bake for 12 to 14 min or until edges are golden. Allow cookies to cool for 1 min and remove to wire rack to cool completely. This is defiantly a KEEPER with my kids.
