Yesterday, Elijah (3) was wanting chocolate chip cookies. That is the only cookie he will eat that I make. I don't know if that is a good thing or a bad thing. So I decided to spruce it up a bit. I made Chewy Peanut Butter Chocolate Chip cookies. Here is the recipe that I got from allrecipes.com1/2 c butter, softened 2 Tbs water
1/2 c peanut butter 2 tsp vanilla extract
1 c packed brown sugar 2 1/2 c all-purpose flour
1/2 c white sugar 1 tsp baking soda
2 eggs 1/2 tsp salt
2 Tbs light corn syrup 2 c chopped semisweet chocolate chunks
Preheat oven to 375 degrees (190 degrees C).
In a large bowl, cream together the butter, peanut butter (I used fresh ground roasted peanuts that I bought at Whole Foods), brown sugar, and white sugar until smooth. Beat in the eggs one at a time, then stir in the corn syrup, water, and vanilla. Combine flour, baking soda, and salt; stir into the peanut butter mixture. Fold in the chocolate chunks ( I accidentally bought chips and it turned out just fine). Drop by 1/4 cupfuls 3 inches apart onto ungreased baking sheets.
Bake for 12 to 14 min or until edges are golden. Allow cookies to cool for 1 min and remove to wire rack to cool completely. This is defiantly a KEEPER with my kids.
